Most people don’t have a lot of time to make breakfast on the weekdays. Wouldn’t it be awesome to just grab a scrumptious, homemade breakfast that takes minutes to make and you can eat it on the go? That’s where these meal prep breakfast burritos come in really handy.

With just a little bit of work ahead of time, you can stock up your refrigerator and freezer with burritos that will only take a few minutes to reheat on your busy mornings. You’ll have a hot, scrumptious breakfast to enjoy and all the work was done in advance. Reheating the burritos will take you less time than going through the drive through.

Not only is this recipe delicious and convenient, it’s also very versatile too. You can use so many different combinations of ingredients to switch things up and to match your taste preferences. If you like breakfast burritos, you’ll love Breakfast Quesadillas too.

Ingredients

  • eggs – you’re essentially going to make scrambled eggs, so and add a splash of milk, half n half, etc., season with salt and pepper and any other seasonings that you like, whisk it all together and cook.
  • salt, pepper
  • half n half, milk, etc. – this will make the eggs fluffier
  • butter or oil – to cook the eggs, the filling ingredients and then to cook the burritos
  • filling options:
    • grated cheese
    • bacon
    • sausage
    • ham
    • mushrooms
    • bell peppers
    • onions
    • spinach
    • tomatoes
    • fresh herbs
  • tortillas – you can use any kind of tortillas that you like for this. My personal favorite are flour tortillas, but you can also use gluten free tortillas or whatever kind you like.

How To Make Breakfast Burritos

  1. Scramble the eggs.
    • Whisk the eggs, season with 1 1/2 teaspoon salt and pepper. Add a splash of half n half or milk. Instead of the milk or half n half, you can add a few spoonfuls of cottage cheese. Mix until evenly combined.
    • Heat up butter or oil in a large skillet and pour in the egg mixture. Use a rubber spatula or a wooden spoon to constantly move the egg mixture around in the skillet until the eggs are cooked but are still soft.
    • Set aside.
  2. Prepare all the filling ingredients. It’s important to cook everything ahead of time. Cook the bacon, sausage, mushrooms, veggies, etc. The filling ingredients will not have a chance to cook through after adding them to the burritos, so cook them in advance.
    • Grate the cheese, chop the fresh herbs and prepare any other ingredients that you like.
  3. Assemble the burritos.
    • Place some of the eggs onto the bottom center of the tortilla. (The amount you use depends on the size of the tortillas that you’re using.) Top with the filling ingredients that you’re using, sausage, bacon, ham, etc, veggies, then grated cheese and fresh herbs.
    • Fold the sides of tortilla over filling, then fold up bottom of tortilla and roll tightly around filling.
  4. Repeat with the rest of the ingredients.
  5. Store the burritos in the refrigerator for 3-5 days or freeze for up to 3 months.

How To Store the Breakfast Burritos For Meal Prep

If you meal prep the breakfast burritos to be used that same week, store them in a covered airtight container. You can store them in the refrigerator for 3-5 days.

To freeze, wrap each of the burritos very well. I like to wrap each burrito in a paper towel or parchments paper. Then, wrap the burrito in another layer, this time aluminum foil and place into a freezer ziplock bag. This will help to protect the burritos from freezer burn and the paper towel or parchment paper will help to absorb any excess condensation while freezing and thawing.

Freeze for up to 3 months.

Serving and Reheating Breakfast Burritos

To reheat, all you have to do is unwrap the burrito leaving only one layer of parchment paper/paper towel.

For the best results, thaw the burritos first. Take them out of the freezer and thaw overnight. However, you can take it straight out of the freezer and reheat, you’ll just need to do it longer. Microwave for about 3-6 minutes, depending on your microwave and if the burrito is thawed or frozen.

The texture will be best if you reheat the burritos in a skillet or airfryer. The tortilla gets golden and crisp on the outside and it’s so delicious.

To reheat on the stove, melt butter in a skillet, add the burritos and cook on low heat, covered, until golden brown on all sides and heated through in the center.

To reheat in the airfryer, brush the burritos with melted butter or oil on all sides and cook for 6-8 minutes, 400 degrees Fahrenheit.

  • 34 cups grated cheese (cheddar, monterey jack, colby, gruyere, mozzarella, etc.)
  • Filling options: bacon, sausage, ham, sauteed mushrooms, bell peppers, jalapeno or poblano peppers, broccoli, zucchini, tomatoes, spinach, etc.)
  • fresh herbs, green onions, cilantro, parsley, etc. 
  • 1416 large tortillas
  • melted butter or oil, for reheating the burritos

    Love this idea. I make them sometimes but never frozed them so will definately need to try. We do make burritoes with left over steak and rice and add some veggies too. Maybe I should try to freeze those and see how that works.

      An oven would work too, Alina. I’m not exactly sure how long you would need to keep it in the oven, though. It would be longer than a microwave, of course. You’ll have to experiment. I’ll try it out myself and let you know. I prefer using the oven or the stove for reheating food too. We put our microwave in a very hidden, uncomfortable spot in the laundry room, just so we learn not to use it for every little thing.

      I like to use flour tortillas. Most of the time I use plain ones, but sometimes I like to experiment with different flavors. Tomato basil is really yummy.

    I make these as well with Red Bell Peppers and Sausage. I like to heat them up in the microwave half way and then just place in a skillet for 2 minutes on each side, makes the tortilla rap crispy and yummy 🙂

    Now back to this specific post. I had made breakfast burritos before but never thought of mixing veggies and eggs while cooking. On Saturady, I had made burritos your way and WOW!!! They are absolutely amazing!! The only thing that I did differently was adding mushrooms (had some in the fridge and didn’t want them to go to waste)!!! My husband loved them! Also, I shared them with my parents family and now have an outstanding order for a batch, for my brother!!!

    Olechka, Thank you so much for such a great idea to make the extra buritoes with variety oh filling, freeze them and reheat its in microwave. It’s SOOOOO convenient especially when you don’t have time to cook breakfast or come home hungry or for any emergency.
    I made about 10 buritoes with variety of fillings clean so many different dishes that leftover and keep in my fridge and hate to throw away.

    Hi,
    I’ve made those fabulous breakfast burritos before and we loved the convenience of them, and even better, they taste amazing. I have a question on reheating them, if it can be done in the over without the burritos drying out. I have a big company coming overnight and the burritos are on my breakfast list. I will be making more than 20 of them, and need a way to heat them up all at once. Obviously on large skillet they will not all fit at once or even in couple of batches. Unless you think just sticking them in them in the microwave is a better idea. Any thoughts? Thanks
    p.s. also on my menu for dessert are your chocolate/nutella cupcakes, they are truly amazing!

      Hi Irene,
      I really liked using raw tortillas from Costco; I think the brand was Tortilla Land. However, they are no longer available in our area. I don’t have another brand that I really like.
      The burritos will last for at least 6 months in the freezer, probably even longer, as long as you wrap them really well so they don’t get any freezer burn or absorb any smells from the freezer.
