Homemade Supreme Pizza-11Did you know that the secret to having a really crisp crust on a pizza is baking it in a blazing hot oven on a pizza stone? Yep, you can finally achieve the same results at home that you get from the really great pizzerias.

I know that getting a take out pizza may seem so much easier, but it’s actually really easy to make pizza yourself. If you make homemade pizza dough and keep it on hand in your freezer, the whole pizza making process will take you less time than getting the pizza delivered from a local shop. Plus, how fun would it be to have a pizza party and let your guests have the fun of customizing their own pizzas? You could set up different stations with a bunch of different topping options, turn on some music and let everyone get creative. Plus, it’s especially helpful to make a quick pizza on busy nights and just use whatever toppings that you can find in your pantry or fridge.

The pizza bakes so quickly, you’ll barely have time to set the table and get the drinks ready. 
Ingredients:

1/2 of a batch of homemade pizza dough

1 Tablespoon olive oil, divided

1/2 (14.5) oz can crushed tomatoes

pinch of crushed red pepper flakes

salt, to taste

1-2 garlic cloves, minced

1/2 – 1 Tablespoon Italian seasoning

1 1/2 – 2 cups shredded Mozzarella cheese

1/2 green bell pepper, julienned

1 small shallot or 1/4 of a red onion, thinly sliced

4 oz sliced mushrooms, fresh or cooked

1.5-2 oz sliced pepperoni

If you’re using frozen pizza dough that you thawed, let it rest at room temperature for about half an hour. Homemade Pizza Dough-9Preheat the oven to 500 degrees Fahrenheit. Place the pizza stone into the oven so that it heats up too. If you don’t have a pizza stone, you can use an overturned baking sheet, but a pizza stone is the secret to a really crispy crust. You want the pizza stone to heat up for at least 30 minutes. I bought my pizza stone in Bed, Bath and Beyond many years ago for about $20 and it is still working great today.

In a skillet, heat 1/2 Tablespoon of olive oil, add the minced garlic, the crushed red pepper flakes and sauté for about 30 seconds, then pour in the crushed tomatoes. IMG_5815 (550x367)Season with salt and then add the Italian seasoning.

Cook, on medium heat, covered, for 5-7 minutes. Cool slightly. You can make the sauce ahead of time. (You only need half of the can for one pizza, but I always make the whole can into the sauce. You can store the remaining half in the refrigerator and use it for another pizza or use it in a sauce or soup. Many times, I like to make a large portion of the sauce, since it comes in handy for many different meals. If I’m not planning to use it up within a week, I just freeze the extra sauce.)

On a floured surface roll out or shape the pizza dough into a 12 – 14 inch round pizza crust, with the edge to be a bit a bit raised. Homemade Supreme Pizza-2I like to roll out the crust right on top of a piece of parchment paper and then cut the parchment paper around the edge, leaving about an inch all around the edges. This way, I can transfer it right to the pizza stone.

Homemade Supreme Pizza-8Transfer the pizza with the parchment paper to a thin, large wooden cutting board or a pizza peel, using the edge of the parchment paper to move it over. Then, use the edge of the parchment paper to move the pizza over to the heated pizza stone.

It’s sooooo difficult to make a choice with all this stuff online, you can literary waste your whole life on reading reviews. I’ll get the one you suggest, I bought some other things you’ve suggested on your blog and have never regretted it. In fact, when my (now husband but then) b-friend was moving into a new place and needed to set up his kitchen, I was like: relax, Olga’s got a post about this so no worries. We printed that blog entry of yours about what to buy for a new kitchen and literary went around buying stuff and ticking stuff off :). Incredibly helpful. In general, I want to thank you for your blog. I follow literary every post, and love both the food you cook, the accuracy of your recipes (never once have I failed to make something good following them, and I am not a great cook at all!) and the beautiful design. Its minimal but not plain, super easy to navigate, comfortable and COZY. Everything’s in perfect measure.       Yes, you can, Jessica. Turn a large rimmed baking sheet over and preheat it in the oven before putting the pizza on it. The crust won’t be as crisp, but it will still work out great:).

    The pizza turned out amazing (once I peeled all the parchment paper off)! However, the parchment paper was stuck to the dough and I struggled to get it off. Any suggestions?

      Try adding more flour or even some cornmeal between the dough and the parchment paper when rolling it out, Vera. That should prevent it from sticking to the parchment.
