Smoked Salmon and Avocado Egg Sandwich

When you’re going all out for a scrumptious, out of this world breakfast, this is exactly the one to make – a smoked salmon and avocado egg sandwich. Seriously, this is packed with flavor and an amazing combination of ingredients.

Flaky, buttery croissants make any breakfast extra luxurious, and the smoked salmon gives it saltiness, smokiness and heartiness. I love the melted cheese and even the chives add so much flavor to the eggs. Avocados are a good idea to add to almost anything, especially breakfast sandwiches. If I eat one of these, it will keep me full for both breakfast and lunch, but it’s a great option for a delicious, really quick dinner option too.

Ingredients:

2 croissants

1 Tablespoon butter

4 eggs

salt, ground black pepper, to taste

2-4 slices of cheese (any kind, I used Havarti)

4 oz. smoked salmon, thinly sliced

1 avocado, sliced

1 lime

1/2 Tablespoon fresh chives, minced

Instructions:

Smoked Salmon and Avocado Egg Sandwich-1-25Slice the croissants in half and toast them. I like using my oven for this, it’s so quick and I can do it all at once. I turn on the broiler to 500 degrees Fahrenheit and toast it until golden, just half a minute or so.

Smoked Salmon and Avocado Egg Sandwich-1-23Melt the butter in a skillet and crack in the eggs, seasoning with salt and pepper.

Place half of the smoked salmon on one side of each of the toasted croissants. Slice the avocado and place half of the avocado slices on the other side of each of the croissants.     That looks mouth wateringly good! Simple but very decadent. Is that hot smoked salmon? Looks yum. Congratulations on your pregnancy! I hope God really helps speed up your recovery afterwards. And I’m guessing it will be a girl 😉 though if not two boys, close in age, have loads of fun together. Even if it’s mostly of the mischievous kind 🙂

    Mmmmm yummmm 2 bad I can’t have salmon but will definitely try this olya with smoked trout semga looks totally divine and soooooo delish my favorite breakfast sammie is the classic egg and cheese hands down and your California egg in the hole am hooked on that about to make some right now hope that your pregnancy is coming along take it easy darlinand drink lots especially now during the summer happy 4 of July cheers g-d bless America

    Do you have a recipe for croissant rolls? I’ve been dying to experiment with them. I made your danish puff pastry and it was out of this world. Do you think that dough would work for a croissant type of roll?
