Sergi and I unintentionally started a family tradition that we didn’t even realize that we had until years passed by.

We eat dinner together every late afternoon after Sergi comes home from work. Good food, combined with a warm and cozy atmosphere in the company of dear ones is the prescription for my happiness. As we sit next to each other at the dinner table and talk about our day, our families, friends, now our children, bills, to-do lists, chores, plans for the week and plans for the future, we weave the strands of our relationship closer and closer.

When we are done with our soup and main course, we then subconsciously stand up and both move to the living room. Somehow, we like to indulge in our dessert on the couch. Whether it’s cake, cookies, ice cream or a simply toast with jam, dinner just wouldn’t seem complete if we didn’t have a few moments to put our feet up on the couch, and indulge in some sort of treat. Somedays, we only have a few minutes, but on the rare evenings that I’m not working and we don’t have anywhere that we need to be, we park ourselves right there and talk for hours or watch a movie or read a book. This is probably my most favorite part of our marriage. 

Now obviously, we don’t eat baked goodies every day. That would be BAD. I usually bake only 1-2 times per week, sometimes once every 2 weeks. We still have a craving for something sweet, though. That’s where fruit comes in. Sometimes it’s just apple slices, grapes, berries, cherries, melon, etc. Any fruit is awesome on it’s own. If I’m a bit more creative and have a few extra minutes, a Citrus Mint Salad is just the thing. I LOVE citrus. The freshness, acidity, sweetness and aroma have won my heart completely. I use lemons practically every day in my cooking. Oranges, mandarin oranges, grapefruit – they are all delicious in their own way. Why not combine them all in a simple, healthy and delectable salad? The addition of mint is spot on brilliant. I took the cue from the Mint Lemonade that I make a lot too. The juicy, sweet and gorgeous orange jewels are stunning and don’t need anything additional to endorse them. This Citrus Mint Salad is something you can make for you and your honey to enjoy while cuddling on the couch, or make it for a family dinner, a holiday meal, or as an addition for your lunchbox.

Ingredients:

1 grapefruit

2 oranges

4 mandarin oranges

1-2 Tablespoons honey

1/2 Tablespoon fresh mint

Instructions:

Segment the grapefruit and oranges, cutting the fruit out of the membrane. Citrus Mint Salad-1-4

You definitely don’t have to take the fruit out of the membrane, and can simply peel the oranges and grapefruit, cut them up and use them in the salad as is. However, there is something SO marvelous about biting into the juicy morsels with no membrane in the way. It really blows my hair back and makes my mouth feel free and unrestrained. Besides, the membrane in the grapefruit is simply awful, in my opinion. I can’t eat grapefruit with the membrane at all. It’s way too bitter.

I like to segment a whole bunch of oranges or grapefruit, store them in the refrigerator and we have a snack ready to go all week. 

Peel the mandarin oranges and then cut them into thin pieces. Citrus Mint Salad-1-3

Combine all the citrus into a medium bowl.

Add the honey and the mint.

    Wow Olga, I’m liking your posts more and more everyday! I get so many ideas and advice from just reading your blog. As a newly married couple, I was actually just thinking of how often I should bake every week and a thought crossed my mind “should I bake every other day?” You answered my question.

    Wow, those are some vibrant colors, great job with photos Olga. We are big on citrus as well, but we usually use oranges or mandarin oranges in our smoothies :).

      Every time I cut a grapefruit in half, the color takes my breath away. Amazing!
      I also love freshly squeezed citrus in smoothies too.
