Sunshine Tropical Fruit Salad

Serves: 6-7 cups
  • 2 cups chopped fresh mango
  • 2 cups chopped fresh pineapple
  • 6-8 oz blueberries
  • 4 kiwis, peeled and chopped
  • simple syrup, if needed (1/2 cup sugar, ¼ cup water)
  1. Chop the mango, pineapple and kiwis.
  2. Place all the chopped fruit as well as the blueberries in a large bowl. Mix to combine.
  3. If your fruit is very ripe and sweet, you won't need any additional sugar. However, if your fruit isn't sweet enough, make a simple syrup by boiling the sugar and water in a small saucepan until the sugar melts. Cool the syrup and add as much as needed.
  4. Store the fruit salad in the refrigerator.
