Recipe type: Miscellaneous
Serves: 5½ liter of concentrate
Ingredients
  • 3 (12 oz) packages cranberries (36 oz TOTAL), fresh or frozen
  • 24 oz raspberries, fresh or frozen
  • 1 gallon plus 1 quart water
  • 4 cups sugar
  • Water or seltzer water to dilute the drinks
  • Mint, for garnishing, optional
Instructions
  1. Combine the cranberries and raspberries in a large pot.
  2. Add the sugar and water. Bring it to a boil, reduce to a simmer and cook for approximately 30 minutes - 45 minutes, until the fruit is nice and mushy. The cranberries will "burst".
  3. Strain the liquid through a fine mesh sieve lined with a paper towel or a cheesecloth. Discard the cooked berries. Cool.
  4. I usually store the concentrate in 2 liter canning jars. You will have approximately 5½ liters of concentrate.
  5. When you're ready to serve, dilute the concentrate with water or seltzer water. You can also add some mint.
