Oven Roasted Salmon With Fresh Tomato Basil Topping (Video)

Oven roasted salmon is one of the most foolproof methods to having the juiciest fish that retains all its moisture. The fresh tomato basil topping gives this entree a vibrantly stunning presentation and so much incredible flavor.

4 portions of salmon fillets (67 oz each), skin on, bones removed

1 1/2 Tablespoon olive oil

salt, ground black pepper, to taste

34 medium tomatoes, seeds removed

13 garlic cloves, minced

12 limes

1/21 Tablespoon fresh basil and parsley, finely chopped

1/21 Tablespoon balsamic glaze, to drizzle on top of salmon

Instructions

  1. Preheat the oven to 500 degrees Fahrenheit. Place a large rimmed baking sheet into the oven to heat up while the oven is preheating.
  2. Prep the salmon. Season each portion with salt, ground black pepper and drizzle with olive oil. Make sure to evenly coat the salmon with the oil on all sides.
  3. When the oven is preheated, carefully remove the hot baking sheet out of the oven and place the salmon on top. You will hear it sizzle right away. Reduce the oven temperature to 250 degrees Fahrenheit and roast the salmon for 12-14 minutes, until it reaches 130-135 degrees Fahrenheit in the center for medium doneness and 135-140 if you want the fish to be cooked through all the way but still really juicy.
  4. While the salmon is in the oven, prepare the tomato topping. Chop the tomatoes and fresh herbs. Add the garlic and half the lime juice. Season to taste with salt, pepper and add more or less lime juice. You can also add some red onion or green onion. Omit the garlic if you prefer. Set aside.
  5. Remove the salmon from the baking sheet right away.
  6. Drizzle the salmon with lime juice, add the tomato topping to each portion and drizzle with balsamic glaze. Serve immediately.
