Marinated Canned Mushrooms

Ingredients

  • 2 cans (8 oz) straw mushrooms
  • 12 Tablespoons olive oil
  • 12 Tablespoons white vinegar (you can also use white or red wine vinegar, or even cider vinegar)
  • 1 small onion or shallot, sliced
  • 1 small garlic clove, minced
  • 1 teaspoon fresh dill, chives and/or parsley minced, each
  • salt, pepper

Instructions

  1. Drain the mushrooms and rinse.
  2. Toss all the ingredients together.
  3. You can also add roasted red peppers, minced, to the mushrooms if you like.
