While sweet potatoes are naturally sweet, I love adding savory touches to them, especially when pairing them with a main course like roast chicken. With the addition of aromatic onions, garlic, and fresh herbs, this recipe brings out the natural earthiness of sweet potatoes in a way that’s downright satisfying.

What makes this recipe even better is the versatility. The onions bring a rich sweetness when roasted, while the garlic and fresh herbs infuse the potatoes with amazing flavors. If you’re looking to make it even more indulgent, a sprinkle of grated Parmesan cheese adds a nutty, cheesy note that perfectly complements the caramelized potatoes. A quick broil at the end of roasting ensures that the potatoes get a gorgeous, crispy finish. This dish is so flavorful on its own, you might just find yourself enjoying it as a main course rather than just a side.

Ingredients

2 ½ lbs sweet potatoes, peeled and cut into 1 - 1 ½ pieces

1 large onion, peeled and cut into ½-1 inch pieces

2-3 garlic cloves, minced

1 teaspoon dry herbs, optional (such as rosemary, thyme, parsley, oregano, etc.)

1 - 2 Tablespoons fresh herbs, finely chopped (whatever you prefer - thyme, parsley, rosemary, etc.)

2-3 Tablespoons oil (avocado, olive, vegetable, etc.)

1 Tablespoon maple syrup

½ teaspoon salt, ground black pepper, to taste

How To Make Roasted Sweet Potatoes  and Onions

Preheat the oven to 400 degrees Fahrenheit.

Peel and cut the sweet potatoes and onion. Roasted Sweet Potatoes With Onions-1-11Peel and mince the garlic and finely chop the fresh herbs.

In a large bowl, combine the sweet potatoes, onion, garlic, dry and fresh herbs, oil, maple syrup and salt and ground black pepper. Mix it all to combine, so that the potatoes are evenly coated by all the ingredients.

You can also add some shredded cheese to the top of the vegetables, if you'd like.

Uncover and cook for an additional 5-10 minutes, until the sweet potatoes and the onions turn golden. If you want a more roasted/charred flavor, you can turn on the broiler during the last 5 minutes of baking.

Ingredients

    Made this dish today Olga unfortunately sweet potatoes were bad but I was able to sun with red potatoes sliced an onion into half rings had a leftover cooking carrot used that too and omg came out really way yummm thanx tons luv for this recipe cheers
