Salmon and Cucumber Tea Sandwiches-10Sergi and I love having company. We love dinner parties, overnight guests, barbecues and picnics. If it involves food and friends and family – we’re all in. When we were buying our house, one of the biggest priorities on a list was a big and open living space so that we could fit lots of people into our home.

I get excited about planning menus and decor, but I like impromptu gatherings just as much. Getting together for coffee or tea is a big part of the Slavic culture and I think it’s because we love spending time with people, whether it’s our loved ones or people that we just met. Coffee/tea can be as casual as you want, with no prep work at all (as long as you left your house in decent shape), because you can just come up with appetizers, snacks and sweets on the fly or have lots of options with a quick trip to the grocery store.

Smoked salmon has tons of possibilities. It can be served any time of day, for breakfast, lunch or dinner. It’s tasty and sophisticated. These tea sandwiches look so elegant and beautiful. The tart and creamy spread has lots of flavor from the fresh herbs and the lemon juice. The smoky salmon pairs so well with the fresh, crunchy cucumbers. Next time you invite someone over, you don’t have to wonder what to serve with the tea. Ingredients:

4 oz. cream cheese, softened to room temperature

2 Tablespoons butter, softened to room temperature

1 teaspoon each fresh dill and chives, minced

salt, ground black pepper, to taste

1/2 Tablespoon lemon juice, or to taste

10 slices dark bread (rye, pumpernickel, black, etc.)

4 oz. smoked salmon, thinly sliced

2-3 small kirby cucumbers, thinly sliced (or 1/2 English cucumber)

Instructions:

Salmon and Cucumber Tea Sandwiches-1-12In a medium bowl, combine the cream cheese, butter, dill, chives, salt, pepper and lemon juice. Mix to combine until smooth.

Salmon and Cucumber Tea Sandwiches-5Place the cucumbers in an even layer over the salmon. Salmon and Cucumber Tea Sandwiches-6Spread more cream cheese mixture on another slice of bread and place it cream cheese side down over the cucumbers. Salmon and Cucumber Tea Sandwiches-7Repeat with the remaining ingredients. You will have 5 sandwiches total. For best results, place the sandwiches in the refrigerator for about an hour. As the cream cheese chills, it will become much easier to slice the sandwiches. Of course, you can eat the sandwich right away, but if you want to be able to slice it neatly, it’s best to chill them in the refrigerator first.

Cut the crust off the sandwiches and then cut each sandwich in half and then cut each square on the diagonal. You will have 4 triangles from each sandwich, so 20 small triangular sandwiches in total. Salmon and Cucumber Tea Sandwiches-9Salmon and Cucumber Tea Sandwiches-11

    Hello – I found your site a few days ago and love it. I have also followed some recipes and tricks and they worked beautifully – I did the warm vegetable salad with zucchini and peppers with the honey dressing made in the frying pan. Also I followed your instructions to Chinese chicken with broccoli – the chicken turned out beautifully. I loved reading your story about your little miracle boy! I was very sad to read your other story! Thank you for being such a lovely person. I will visit often. I am German but have lived in Portugal since I was 10.
