Ham and Cheese Baked Eggs

How would you like a quick and simple breakfast idea, that will only take a few minutes to put together? I usually have all these ingredients on hand, so I can make it any day of the week and it makes that day just a little bit more special. I always have some sort of deli meat and cheese in my refrigerator - ham is our favorite, and with a sprinkling of fresh tomatoes, roasted peppers (super handy to have in the pantry), and fresh herbs, you have a colorful, very filling and delicious breakfast. 

Breakfast is my favorite meal of the day, but unlike dinner, we usually don't have the luxury of sitting down and leisurely enjoying it, most often grabbing something on the go. This is so scrumptious and filling but takes a few minutes to assemble and cook. You can even cook it and eat it in the same dish! (Just give it a few minutes to cool down.) Baked eggs with ham, cheese, herbs, tomatoes, peppers - you can use anything you like, mushrooms, sausage, etc.

Put all the toppings in one dish, crack in the eggs, bake and eat! Who said weekday breakfasts have to be coffee and donuts?

Yields: 2 servings

Ingredients:

1 Tablespoon butter

4 eggs

4 Tablespoons ham, chopped

4-6 Tablespoons cheese, grated (any that you like)

1 teaspoon parsley (you can also add chives)

2 tablespoons tomatoes, chopped

2 Tablespoons roasted red pepper, chopped

salt, pepper

Preheat the oven to 375 degrees.

Melt butter and grease 2 baking dishes. Crack in 2 eggs into each dish. Sprinkle in the cheese, herbs, and ham. Add the tomatoes and red pepper. Season with salt and pepper. Bake for about 5-10 minutes, depending on how you like your eggs, bake less if you like the yolks runny, more if you like them hard.

      Sorry, I don't have a link to these particular ones. I bought them years ago at a thrift store. They are 6 inches in diameter. You can use any oven safe ramekin or baking dish that fits the ingredients. I've made this recipe in a variety of different dishes.

    Yumm! That looks so perfect; eggs, ham, cheese, tomatoes; that sounds like the perfect breakfast! Do you think it would work well if the eggs were scrambled?

      Natasha, I'm sure it would work with scrambled eggs too, although you should probabaly add some milk or half-n-half, so the eggs won't turn out rubbery.
