Spice Rubbed Flank Steak in the Oven

This Spice Rubbed Flank Steak that's made in the oven is a super easy, flavorful dinner made with just 5 minutes of prep. Juicy, tender, and packed with flavor, it’s perfect for busy nights or elevating a weeknight meal.

I always appreciate simple, fuss-free meals that make life easier without sacrificing flavor. This Spice Rubbed Flank Steak that's made in the oven is the perfect example. I love turning to my oven as much as possible for quick, hands-off dinners, and this one definitely checks all the boxes. With just 5 minutes of prep, you can have a mouthwatering steak on your table, and the oven does the rest of the work.

What I love most about this flank steak is how juicy and tender it turns out, even with minimal effort. The spice rub adds a punch of flavor that really elevates the meat—trust me, it’ll knock your socks off! Slice the meat thinly, and it practically melts in your mouth. You can also adjust the spices to create a variety of delicious flavor profiles.

When served alongside rice and the Balsamic and Soy Vegetable Medley, this meal becomes a showstopper that feels special yet is easy enough for any night of the week. It's also great to use for fajitas or tacos. Whether you're cooking for a busy weeknight or prepping something impressive for guests, this steak is a winner every time. 

Ingredients:

1 ½ lbs flank steak

salt, pepper

1 teaspoon chili powder

½ teaspoon coriander

1 teaspoon paprika

1 teaspoon dry mustard

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon cayenne pepper

2 Tablespoons oil

How to Cook Flank Steak in the Oven

Preheat the oven to 500 degrees and place a large rimmed baking sheet to heat up in the oven while it's preheating.

Spice Rubbed Flank Steak-1-11Blot the steak dry with a towel and season it with salt and pepper on both sides.

In a small bowl, combine all the spices. Spice Rubbed Flank Steak-1-12Rub both sides of the steak with the spice rub. You will have some of the spice rub left.

Spice Rubbed Flank Steak-1-13When the oven is preheated, take out the searingly hot baking sheet and pour 2 Tablespoons of oil on it, tilting the sheet to spread the oil around or use a heat proof brush to disperse it all over the surface of the baking sheet.

Place the steak on top of the hot pan and return to the oven. Spice Rubbed Flank Steak-1-14Roast for about 15 minutes. Remove the steak from the oven and let it rest for at least 10 minutes. Slice the steak thinly, across the grain.

    Does the cooking time change if the steak is smaller or larger than 1 1/2 lbs?

      Never mind....I had a smaller cut and used the 15 min cook time and it was perfect.....SO delicious!!! Oh my, I never knew flank steak could be so delicious!!! Thank you, Olga!!

    My husband & I really enjoy the steak prepared this way; however, I'd like to ask for advice. Although we have a new oven, every time I prepare the steak, the oil/grease splatters all over & there's a burnt scent. I do not think this happens because the oven does not work properly. What can I do to prevent that? I do cover the bottom of my oven with aluminum foil. May I cover the steak with foil as well? Thanks for your help!

      Unfortunately, there's no way to prevent the grease splatters when you make steak, Irina. Whether you're doing it on the stovetop or using the broiler, it's a messy process. In order for the steak to get a really great sear, you need it to be in contact with a lot of heat, so if you cover it up, you won't get that sear and the steak will look gray. My rule of thumb is to wait until my oven is already messy, so I don't feel too bad making it look so greasy and then I clean it shortly after and has to be done anyway, so at least I got some nicely seared steaks out of it:).
      It's really best to do steaks on the grill, but I know when I lived in an apartment for 8 years that it's not very possible all the time, so this is at least this recipe gives you the option to use your oven.

    I had a terrible experience with cooking this! My entire oven is splattered with oil from the steak and the oil was burning! Smoke all over the house! Oven is not a good way of making it

    hi olga!
    I have tried making this steak "in 15 min" twice and was not successful both times.. It takes me an hr to have it well done.I have done every step exactly like you have and still. First time burnt the blyashka that the fire alarm went off lol. I do have a gas stove if that makes a difference

      I don't like to cook steaks until they are well done, Alona. I also always use an instant read thermometer whenever I cook meat to make sure I have the correct doneness that I am looking for.

      Just cook it longer, Lana. However, the steak will be much tougher, so I just have to give you a fair warning.

    Do you think it might be better if I turn it half way through? Also do you think a flat iron steak will work?

      No, turning it is not necessary, and if you do, your steak will not get a nice sear.
      I haven't personally prepared the flat iron steak using this recipe, but you can give it a try.

    This looks good! But is there a different way to cook it, so not too use such high temp?

      Hi Anna, No there isn't a different way to cook it. If you cook it at a lower temperature, the beef will be gray and will not sear properly and won't be golden brown. You will have to cook it longer at a lower temperature and just won't get the same results. Of course, you can grill the steak at a high temperature as well. That would be even better.
