English Muffin Breakfast Sandwiches with eggs, cheese and a variety of toppings - spinach, peppers, mushrooms, bacon, sausage, etc.

We love these english muffin breakfast sandwiches. I especially like them for meal prep, when we have overnight guests or when serving brunch for a lot of people. Assemble all the sandwiches, then you can reheat them all at the same time. So convenient!

They are also very versatile. You can make them simply with eggs and English muffins or add a whole slew of different toppings – cheese, ham, bacon, sausage, roasted peppers, mushrooms, spinach, etc. I also really like making Sheet Pan Eggs, where you bake a big baking sheet of eggs (like of like a baked omelet), then cut out the eggs and use those in the sandwiches. This is wonderful when serving brunch so you can offer several flavor options.

Not only are these english muffin sandwiches convenient, they also are better! When the sandwiches get wrapped up in parchment paper, they become softer, the cheese melts and it becomes so much better than if you simply assemble the sandwich and eat it right away.

Helpful Tips and Frequently Asked Questions

How to meal prep English muffin breakfast sandwiches:

Assemble the sandwiches. Wrap each sandwich in parchment paper. Store in a large ziplock bag or an airtight container in the refrigerator for up to 5 days.

Can you freeze English muffin breakfast sandwiches:

Yes! Assemble and wrap the sandwiches individually in parchment paper, then wrap each sandwich in aluminum foil too. Place them in a large freezer ziplock bag or airtight container and freeze for up to 3 months. Thaw before reheating.

How to reheat breakfast sandwiches:

Place the wrapped sandwich in an air fryer, toaster oven or standard oven and heat up to 8-10 minutes, just until warmed all the way through.
If you want the sandwiches to be more crisp on the outside, heat them at 400 degrees Fahrenheit, if you want softer sandwiches, use 350 degrees Fahrenheit. The time will depend on your appliance and how thick your sandwiches are. The thicker the sandwich, the longer they will take to warm through.

Make other breakfast sandwiches using this method

I make all kinds of breakfast sandwiches. Instead of the English muffins, try croissants, bagels, sliced bread or biscuits. Assemble them and store them the same way.
