Marinated Canned Mushrooms

Marinated mushrooms are a wonderful side dish. I even like to snack on them sometimes. Homemade marinated mushrooms just can't compare in taste and texture to store-bought. I use several recipes for marinating mushrooms, one of which I share in the Pasta salad recipe and Natasha's Kitchen has a great one too. It is so convenient to marinate fresh mushrooms and have in the refrigerator to enjoy whenever you feel the craving for a snack. Another shortcut is to use canned mushrooms and gussy them up with lots of fresh flavor.

Yields: 2 servings

Ingredients:

2 cans (8 oz) straw mushrooms

1-2 Tablepoons olive oil

1-2  Tablespoons white vinegar (you can also use white or red wine vinegar, or even cider vinegar)

1 small onion or shallot, sliced

1 small galic clove, minced

1 teaspoon fresh dill, chives and/or parsley minced, each

salt, pepper

IMG_7914Drain the mushrooms and rinse. IMG_3021Toss all the ingredients together. IMG_3029Voilá! What a simple and easy way to bring some fresh flavor into canned mushrooms and elevate them to a whole other level. You can also add roasted red peppers, minced, to the mushrooms if you like.IMG_3055

Ingredients

Instructions

  1. Drain the mushrooms and rinse.
  2. Toss all the ingredients together.
  3. You can also add roasted red peppers, minced, to the mushrooms if you like.

    Omg I usually roast em but yo olya I will definitely try this recipe sometime looks really way simple and easy peezy breezy wanna make progress with my healthy snacking certainly are lots better than a bag of chips or a Disney mickey pop

      Roasted mushrooms are wonderful! I love them myself:).
      This is a very simple way to dress up canned mushrooms. I specifically like the straw mushrooms. They have a really great texture and flavor.

      You can eat it right away, Tabitha, or marinate it in advance.

      Actually, you can just season it to taste. Add as much of everything as you like, according to your taste. This "recipe" is really adjustable.

      Wow! Those look fantastic, and I'm going to make them rellay soon. I happen to have a local grocery that frequently has nice big mushrooms that would be perfect for this.

      I bought them at Publix. Most grocery stores have them.
