Creamy Broccoli Cauliflower Salad

This fun and colorful salad is full of crunch, freshness and brightness. I can never decide if this salad tastes hearty or light, because it is such a wonderful combination of both. It can serve as a side dish, a picnic item or a simple lunch. We often serve this at parties as a part of a collection of numerous different dishes. If you’re wondering what to bring to the next potluck, this is a great choice.

Take advantage of the vegetable season and enjoy the florets of broccoli and cauliflower with the crunchy peppers and juicy tomatoes. Paired with hard boiled eggs and chunks of bologna, this is such a unique salad. It’s also very easy to make, which is always a big plus.    

Yields: 8-10 servings


2 cups broccoli florets

2 cups cauliflower florets

1 medium red bell pepper

1 pint grape tomatoes

1/2 lb bologna

3 hard boiled eggs

1/2 cup mayonnaise

salt, pepper

Cut the broccoli and cauliflower into bite size florets. Cut the pepper into small chunks. Cut the tomatoes in half, or keep them whole, it’s up to you. Cut the bologna into small chunks. Coarsely chop the eggs. Mix all the ingredients together with mayonnaise. Season with salt and pepper to taste.
