Pasta with Artichokes, Fennel and Onions

Fennel and Artichoke Pasta-1-32Sometimes, I like challenging myself to play the "pantry game". I like to spend at least one week per month, not buying anything new, but using up whatever I have. This can seem a little bit depressing, but it doesn't have to be. It's actually a lot of fun to see how creative and resourceful you can be. The trick to saving money on groceries is to have fewer trips to the grocery store. Not only will you save money, but you will also save so much time. With a well stocked refrigerator, freezer and pantry, you can go for a few weeks without having to go to the grocery store, as long as you plan well. One of my favorite tricks is to use up perishable ingredients first, leaving the ingredients that will stay fresh longer to be used during the later weeks. You can cook many delicious dinners that will not make you feel as poor as a church mouse. You can create many ingenious dinners that taste really fresh and even gourmet.

I'm always well stocked up on pasta of all shapes and sizes. Adding vegetables to a pasta dish is a very easy way to make it more interesting and add lots of flavor. You can keep canned baby artichokes in your pantry for dinners just like this one, or you can even use frozen artichokes instead. Fennel, onions and garlic are pantry ingredients that will stay good for weeks without spoiling, so they are the perfect ingredients to add fresh flavor.

Roasting vegetables gives them such a great caramelized and savory taste. Adding the roasted vegetables along with all the aromatics to the pasta creates a really memorable meal that even looks and tastes fancy. Crunchy and golden breadcrumbs add even more interesting taste and texture and fresh herbs is another trick that I like to use to make any dish fresh. Ever since I had the baby and we came back home from the hospital, I've not been feeling well enough to leave the house much. Besides, all my tubes, IVs and other medical equipment make it extra difficult. My husband does almost all the grocery shopping and I've only been to a grocery store once, which I deeply regretted on the way home:). Meals like this one are especially appreciated during times like this. Sergi and I love seafood, as you are well aware of, if you've been hanging around this blog for a little bit. We never seem to get tired of the taste, and it also helps that it's not complicated and quick to prepare. Pan frying it on both sides until it' s golden brown and juicy is my favorite way to prepare it. I've posted this dinner on social media several times and was asked to share the recipe, so here I am, fulfilling my promise.

Trout is very affordable, it's mild, so it doesn't taste "fishy", one medium sized fish is the perfect portion for one person and like I said earlier, it's on the table in no time. Normally, we just serve  it with a wedge of lemon and a sprinkling of fresh herbs, since lemon and seafood are such a lovely pairing. When I have a little extra time, I like to make a lemon butter sauce. It's creamy, tangy and "buttery" of course. I'll share a recipe for that whenever I feel up to it. However, it's so delicious plain and simple, that you don't need a sauce to enjoy it.

Whenever I ask Sergi to pick up some trout at the store, he is more than happy to oblige, since this is his favorite seafood preparation too. I love when our taste buds match up. I really hope Nathaniel will grow up to like it too.  [Read more...]

We are finally home! After a 10 day hospital stay, it is especially nice to be in our comfortable, cozy surroundings. This weekend, we basked in the joy of having our son home with us and have the hospital experience behind us. We feel so blessed and are incredibly happy. I shared some really cute pictures of our baby boy yesterday on Facebook and Instagram, so head on over to check them out if you haven't seen them yet. While I am recuperating and enjoying my "maternity leave", I have some really yummy recipes stored up to share with you.

I make roast chicken quite often for dinner. Usually, I make potatoes or rice to serve alongside, but since I'm a big fan of other grains too, barley is another option that I reach for. This time, I decided to bake the barley in the oven and to use chicken thighs instead of a whole chicken. With the usual onion, carrots, celery and garlic flavoring the barley, I also added butternut squash and was so pleased with the results. I meant to post it that day, but that didn't work out, and now we ended up being in the hospital for ten days after the delivery. Yes, life is full of the unexpected. You can make plans and have expectations, but not everything is in our control. Coffeecake Bundt Cake

A tender, not too sweet coffeecake with a cinnamon, pecan and brown sugar streusel, this is a delicious treat with your coffee or a cold glass of milk.

My bundt cake pan gets a lot of use in my kitchen. The fact is, that I like desserts that I don't have to fuss with too much. When you make a bundt cake, the prep work is very minimal but when you take it out of the oven and serve it on a fancy plate, you're rewarded with a stunning dessert. It's beautiful enough to serve for company and easy enough to make for a low key evening with the family.

This is a recipe that I have been using from Cooks Illustrated for the past few years. Every time I make it for company, everyone asks if the recipe is on my blog, and I'm really surprised I haven't shared it yet. Coffeecakes are really great. I love that they aren't too sweet but are tender and soft. I'm glad Sergi shares my opinion; this happens to be his favorite bundt cake. He's very partial to both coffeecakes, pecans and bundt cakes, so it's a score on all counts. Cinnamon and pecans add great flavor and crunch. No wonder they are called "coffeecakes", since I can't think of anything that would be better with a nice cup of coffee. A warm cup of tea or a cold glass of milk are other great alternatives, depending on what you like. Leftovers store really well too, so you can pack some into your lunchbox the next day.

I was so happy with the results of this recipe. This will be my go-to method for succulent, melt in your mouth beef from now on. You can even make a large batch and freeze part of it for an easy dinner in the future. Since I wanted as much flavor as possible in the sauce, I added tons of aromatic vegetables, which sort of melt right into the sauce as the meat cooks for hours. I absolutely love hazelnuts and always have a stash in my freezer, so it's a flavor that I like to use in many of my other sweet treats. Fan club members of Nutella know something about that creamy, chocolaty hazelnut spread - it's absolutely divine. I'm not alone with my love for chocolate and hazelnuts. Caramel, or dulce de leche is another flavor that is just perfect with this whole combination.

Brunch menus are so much easier to cook and most people love breakfast foods. Saucy Shrimp With Sun Dried Tomatoes and Feta-1-25Plump and juicy shrimp smothered in a creamy tomato sauce are just divine. I've been meaning to re-create this remarkable dish ever since we tried it at Bonefish Grill with my husband about a year ago. I would have never thought to pair shrimp with feta cheese, but as soon as I put it in my mouth I was instantly wowed and my fork kept reaching for another succulent bite.

The cheese softens and melts just a bit, and has that briny, salty flavor that pairs so well with the light tomato sauce. The sun dried tomatoes add a rich, concentrated and sweet tomato flavor. They serve this as an appetizer at Bonefish Grill, along with a loaf of warm, crusty bread. Even though the shrimp were absolutely perfect, the sauce was a little too rich for my liking. Ok, I admit, it felt like the shrimp were swimming in butter. I decided to lighten it up and made a roux to thicken it up a bit and used a lot more broth instead of having it consist of mostly butter. Instead of using about a stick of butter, I used only 1 tablespoon, with just a splash of cream at the very end to make it perfectly smooth and velvety.

You can serve the shrimp as an appetizer or cook some pasta and make it an entree, which is how I prefer it. This shrimp meal with a Mediterranean flair is easy to achieve even in the winter months, since the ingredients are pantry staples. You can even add some olives to make it complete. Sprucing up hard boiled eggs doesn't take much time or effort, and it's really hard to mess it up because eggs are so good to begin with. I've made many different variations throughout the years for many occasions, and I still have fun playing with flavors.

You probably already have most of these ingredients in your pantry. The filling is zesty and creamy and has some crunchy texture from the celery and pickle. Tuna pairs magically with eggs and the fresh herbs give the whole pantry staples flavor group some cheerful brightness.

Broiled Chicken Kabobs in the Oven

If you don't have a grill, you can still make juicy chicken kabobs in the oven. The chicken and vegetable kabobs soak in so much flavor from the dill yogurt marinade and get some char from broiling in the oven.

Sometimes when you're in a kabob mood, it's not always practical to go fire up the grill. Not only is this recipe an indoor kabob recipe, but it's also another recipe to store in your "Quick and Easy" dinner options. Another advantage of this recipe is that you are cooking vegetables right along with the chicken, so you don't have to worry about making a side dish.

Marinating the chicken in Greek yogurt and a blend of spices and lemon juice gives it nice creaminess and tang. Mayonnaise is another great option to use instead of the yogurt and will work just as well. I used smoked paprika, which is an awesome way to add that smoky flavor that we love from the grill. You can use just about any fresh herbs and spices that you like.

Simple enough for a quick family dinner for those busy nights, this dinner is also something that you can feel proud to serve to guests too. Healthy, quick and yummy - that's my motto.

How To Cook Brown Rice Perfectly and Zucchini and Garlic Brown Rice

Zucchini Brown Rice-1-19Every cook should have a go-to method for cooking common side dishes, because we make them all the time. When you're making mashed potatoes, there isn't really a recipe, although there are many tips for best results (I have a whole post dedicated to Mashed Potatoes). Rice is different, though. When I found a way to cook rice that worked every single time and had perfect results, I didn't mess with it. Of course, I have many variations of rice, but the main recipe is always the same. We love long grain basmati rice the best in our family and most of the time, white rice is the one we buy. Brown rice is so much healthier though, so I was determined to find a perfect method for cooking brown rice too. I tried many different methods - slow cooker, stovetop. The results were ok, but I wasn't too impressed. What's the point of healthy food if you have to force yourself to eat it? Our main issue with the brown rice was how unevenly it cooked. It would turn out clumpy, sticky and still have some grains that were hard and undercooked. How is that possible? Mushy and undercooked in one pot? Finally, one day I tried this recipe from Cook's Illustrated, and we have a winner! It's incredibly easy and the rice cooks so evenly, with every grain perfectly cooked and so fluffy. The nutty, chewy and "earthy" flavor and texture of brown rice is really awesome. If you haven't tried it yet, I highly recommend it. This recipe really is foolproof. It does take much longer to cook than white rice, which is why I like making a big batch. But come on, there's hardly any work at all!

Since I like to add things to rice all the time, I'm including a Zucchini and Garlic version. You can skip the zucchini and just add some sautéed onions (or shallots, leeks, etc), garlic and herbs. You can also use a carrot instead of the zucchini. Once you start experimenting, there's no stopping. Golden Beet Soup is a staple in our home now. Not only is it very hearty and filling, like a good soup should be, especially in the winter, but it's also brothy (my personal favorite), light, healthy and tastes phenomenal.

Beets are a no-brainer for a Belarusian. It's an ingredient I grew up with and something our family ate regularly. Borsch will always be one of my favorite soups. Not only did we buy it year round, but we also grew it in the garden. We ate beets in soups and in salads and even used the beet greens. However, it was always red beets that we were so intimately acquainted with. When I saw some beautiful golden beets at the grocery store one day, they ended up coming home with me.

I'm a soup fiend, so that was my first approach to these beauties. I also didn't want a Borsch copycat, so I gave it a bit of a different spin. With a broth, "vegetably" concoction in mind, I browsed through the rest of the produce aisle and picked up a few other things that seemed like a good combination in my mind. Served with a dollop of sour cream, this is a great beet soup. If you love vegetable soup, give this one a try.

Third Trimester Pregnancy Update

I have been in my third trimester for the past few weeks, and let me tell you, it feels wonderful knowing how close we are to the delivery day. It sounds awesome to say that the baby will be born NEXT MONTH! As I have already explained before, I will be having a c-section the last week of February, when I am 37-38 weeks pregnant. I am so excited to meet this little guy. I can't wait to see him and hold him in my arms.

I promised you a pregnancy update, since so many of you are writing e-mails and messages asking how I'm feeling and wishing us all the best. You are incredible. I am so touched by all the support, prayers and encouragement. To be honest, I don't really like talking about this pregnancy because it feels like I'm whining and complaining too much. This Chocolate Volcano Cake is a cake I have been making since I was a teenager. When there's an event that requires a cake, this is one of the cakes that I can almost make in my sleep, doesn't require too much work, and always tastes phenomenal.

In our family, we call it the "Pincher" cake - Торт "Пинчер". It's chocolaty, moist, not too sweet, and has the crunch and nutty flavors of whatever nuts you like. The chocolate glaze that's drizzled on top of the cake is so good, you might want to make extra to eat with a spoon:). You can also add fresh or dry fruit or berries to it. Maybe once you try this cake it will become a go-to favorite for you too.

It's so fun to make it into the shape of a volcano with lots of delicious sour cream chocolate glaze streaming down. I also love that it's so easy to assemble into something that makes a statement without too much precision.

I thought about adding some mushrooms, green beans, asparagus or peas to give it a more unique twist, more color, flavor and texture. I also thought about adding a crunchy breadcrumb topping. All of these additions would be great. However, sometimes less is more.

Pasta holds a really great charm for me. Most of the time, dinner comes together in as much time as it takes to cook the pasta. That’s a huge benefit on many counts. This recipe also makes good use of already cooked poultry. Who doesn’t have leftover chicken at one point or another or turkey this time of year? This recipe makes good use of this very common leftover and gives it a complete makeover. Saucy pasta is just the best, but not if it’s heavy and gloppy. I like when it coats the pasta with a silky texture.

The creamy but light roasted garlic sauce is absolutely delicious and complex enough on it’s own. With some poultry and fresh herbs, the meal is complete and perfect. I would even eat the pasta with the sauce and herbs alone. (To be quite honest, and since I’m already bearing my soul, I picked out most of the meat and gave it to my husband. Being a huge meat-lover, he didn’t mind a bit.) You guessed it, this pregnant lady still isn't a big fan of meat. Or any other food most days of the week. When we go out to eat at a fancy restaurant, they usually have some sort of bread to munch on. Warm, fluffy and tender yeast breads give any occasion a special touch. I actually survive mostly on carbs, (yes, I realize that is a very weird diet) and these cute knots are something I make when I want to give any weeknight dinner a special flair. They are so easy to make, that it's a shame we don't make them more often.

These beautiful rolls take so little effort and are topped with garlic, herbs and Parmesan. You can even make the dough ahead of time, shape them and keep them refrigerated a day in advance and then you'll magically have warm Garlic and Herb Knots on the table fresh out of the oven. They will disappear from the basket faster than you would believe. When our family first came to America, many ingredients that we saw in grocery stores were a mystery to us. We had never seen sweet potatoes in Belarus, and during the first years that we moved to the United States, we would gaze at sweet potatoes in the stores and cookbooks and have no idea how to cook with them.

One year when I was a teenager, someone happened to give us a whole bag of sweet potatoes. Here was the perfect chance to try out these interesting spuds. The frugal immigrant nature in us demanded that we make good use of any food that was set before us, so we began the search for sweet potato recipes. Of course, we quickly found many pie recipes and that's exactly what we made. We didn't know what to expect, but as my parents, five siblings and I all crowded around the kitchen table, we were all eager to try this orange dessert made from POTATOES. The pie was a hit with all of us and for the next few weeks, we made the rest of the sweet potatoes into pies too.

This year, as I was walking through the grocery store, the display of sweet potatoes caught my eye and quickly brought back memories of that first time that I tried sweet potatoes. When I mentioned the idea of making a sweet potato pie to my husband, he was very skeptical. Just like a typical Belarussian, who can only imagine regular potatoes that can be mashed, roasted, fried and most definitely served with meat, he wasn't sure if he liked the idea of eating a sweet potato pie.

Well, he's a very nice guy and has learned to humor me with my food ideas throughout the years, so we brought those orange taters home. When he came home from work one evening and saw me slicing up the pie, he was happy to give it a try. Guess who asked for a slice to take with him to work the next day and was really excited to have some more pie after dinner three nights in a row?

I played around with the recipe to make a very creamy filling that didn't taste like a version of pumpkin pie. The light and creamy custard-like filling is so smooth. The addition of cognac, vanilla, cinnamon and nutmeg really give a lot of flavor to it. Hosting Thanksgiving dinner is a BIG DEAL. Since it's usually when the whole family gets together for the big feast, it can be nerve wracking to be in charge of something so important. It's kind of like a rite of passage when you finally set up a big table and everyone asks YOU what they should bring.

I've tried many different ways to prepare a turkey for a holiday meal and in this post, I am sharing the easiest recipe and sharing all my tips with you so you get wonderful results. I've shared some of my favorite recipes for turkey with you in the past two years, my all time favorite - Brined Turkey and the Slow Roasted Turkey. I still love those recipes and still use them to this day.

I know brining a turkey, cutting up a whole turkey, flipping a turkey over and other such shenanigans can seem intimidating to some people and they are just looking for a method to have a perfect turkey without any fuss and bother. This is what this recipe is all about. Even the most inexperienced cook can easily master this recipe. If you can lift that heavy bird into the roasting pan, you too can have a perfectly crisp, golden bird with juicy meat.

Baking with pumpkin seems to be mandatory this time of year. Try googling pumpkin recipes and you will be blown away with all the different options. Seasonal cooking has a way of making us nostalgic and sentimental and who says there's anything wrong with that? I certainly don't. There's something very right and proper about bubbly, comforting casseroles in the cold winter months, asparagus and snap peas in the early spring, fresh garden tomatoes during the summer and of course, pumpkin is all the rage in the autumn. It's the iconic Thanksgiving dessert.

Every time I find myself in possession of this orange treasure, my mind quickly turns to cheesecakes. That's probably because cheesecake is one of my favorite desserts ever, so naturally pumpkin cheesecake would also be high on my list. I've realized that dessert bars are really my thing too, so this year, I've converted my favorite Deluxe Pumpkin Cheesecake recipe into these amazing Pumpkin Cheesecake Bars. I am now officially converted and will make these bars as long as there's pumpkin available. The addition of sour cream to the cheesecake batter makes them even more tender, which is exactly how I like it.

In Russian, this recipe would be called "palochka viruchalochka" (палочка выручалочка) or "magic wand". It doesn't really sound right in English, but basically it means that whenever you need something wonderful and fast, you wave your magic wand and "voila", you have transformed your home into an inviting abode for all who enter. Don't you just love those recipes? Whenever you want a special treat for your family or maybe you have expected guests arrive for a cup of tea, take out the muffin pan and start baking. My favorite filling for cream puffs is pastry cream, and this time, I used a recipe for Hazelnut Pastry Cream that I found on Cook's Illustrated. Of course, there are many other options, as simple as whipped cream or a cream cheese frosting. Hazelnuts are my favorite nuts hands down, and they bring a festive flair to anything they are included in. I absolutely love the flavor and texture of this pastry cream, and I'm sure I'll be using it in many other desserts too. The hazelnut praline is worth every second that it takes to prepare. I would be as happy as a squirrel if someone just gave me a box of the praline to munch on.

In my experience, I can hardly ever find hazelnuts in grocery stores, since most of them only sell hazelnuts during this time of year. I like to enjoy them all year long, so I order them online and always have a nut stash in my freezer. [Read more...]

Roasted Potato, Sausage and Pepper Dinner-1-10One day as I was roasting potatoes, I had a sudden burst of inspiration. Why not include some other ingredients with the potatoes that would make it into a complete meal? I already add roasted potatoes along to whole Roasted Chicken and also to Roasted Chicken Breasts and it's one of our favorite dinners, so I knew it would work great.

I get lots of recipes ideas throughout the day, during random times, so I quickly jotted it down into my handy dandy notebook:). Yes, I am one of THOSE people. I have lists, notebooks, planners, etc. and I can't function without them. I wrote down a list of ingredients that I thought would work great in this recipe. I wanted this to be a quick dinner option, so I chose ingredients that would all cook at the same time and complement one another well.

We have a local Polish store where they make their own sausages, smoke their meat themselves and have the most incredible multigrain bread. That's where I stocked up on the sausage for this dinner. I also added a bell pepper, mushrooms, onions, garlic and herbs. After testing out this recipe a few times, I am finally posting it for all of you.
