2 cups broccoli florets
2 cups cauliflower florets
1 medium red bell pepper
1 pint grape tomatoes
1/2 lb bologna
3 hard boiled eggs
1/2 cup mayonnaise
- Cut the broccoli and cauliflower into bite size florets.
- Cut the pepper into small chunks.
- Cut the tomatoes in half, or keep them whole, it’s up to you.
- Cut the bologna into small chunks.
- Coarsely chop the eggs.
- Mix all the ingredients together with mayonnaise. Season with salt and pepper to taste.
- Keep the salad refrigerated.
