This time of the year that grocery stores and farmer's markets are starting to spill over with gorgeous arrays of lovely vegetables. Zucchini is one of the first to make its appearance every spring and then the tomatoes join the party in the summer. My favorite pairing with zucchini are tomatoes, so this was an absolutely delicious combination.

It's risky baking zucchini and tomatoes in a tender frittata, since there's a possibility of ending up with a mushy, watery concoction, but not in this case. The zucchini is still vibrant with just the right amount of crispness, and the tomatoes are still juicy, sweet and roasted, but not disintegrated. The frittata can be enjoyed in so many ways, at breakfast, brunch, lunch, dinner and or even a midnight snack. I've even packed it with up as a lunch and it was great cold too. 

The fluffy eggs make up the bulk of the frittata. They are so fluffy, cheesy and satisfying. With the tender but still crisp zucchini in the center and topped with garlicky tomatoes and fresh herbs, this breakfast is beautiful as well as tasty.  [Read more...]

I’d take a warm, fluffy yeast pastry over cake any day of the week. And when that pastry is made from Danish dough? Well, that’s where it’s at.

There’s something magical about the texture of Danish dough—it’s the perfect combo of two already amazing doughs: a soft, pillowy yeast dough meets a flaky puff pastry dough. The result? A pastry that’s incredibly soft and tender on the inside, with layers of buttery, melt-in-your-mouth flakiness on the outside. Pure pastry perfection.

Danish pastry bread is absolutely amazing and it's so good, I don't mind making it from scratch, because it's totally worth it. It's a mixture of soft yeast dough with buttery and flaky puff pastry. In my mind, it'a a match made in heaven. Puff pastry is wonderful in it's own way, but danish dough is not as greasy and is so tender and flaky.

It's not as intimidating as it sounds to make your own danish dough from scratch. With a little bit of time, your patience will be rewarded. What can you make from danish pastry dough? If you grew up in a Slavic household, chances are you’ve had your fair share of pan-fried potatoes—or Zharenaya Kartoshka, as we call it. Pan fried potatoes with mushrooms are the ultimate version. It's one of those simple, comforting dishes that we are drawn to whenever hunger strikes, even if there’s nothing else planned for dinner. For me, whenever we didn’t have anything set on the menu, my parents would give us the familiar signal—time to peel potatoes. 

Even today, Zharenaya Kartoshka (pan-fried potatoes) is a dish that I turn to when time is short and I need something quick, filling, and full of flavor. There’s something about a pan of sizzling potatoes that always feels like home. Potatoes are one of those pantry staples I never seem to run out of, and thank goodness for that! I always have a backup stash ready to go, just in case.

But my absolute favorite way to make pan-fried potatoes is with mushrooms—particularly chanterelles. While fresh chanterelles are tricky to find, I’ve discovered that dried chanterelles work wonderfully and are easy to keep on hand. Buying Shrimp

What kind of shrimp should you buy?

The one behind the case in your store's seafood department, frozen raw, already cooked, or the shrimp that's sold in a ring of pinkness?

Here's my advice to you:

Always buy RAW, frozen shrimp, the one that looks gray, not pink. The shrimp on the LEFT, not on the right. It's also a good idea to buy shrimp in packages where you can see what the shrimp looks like, so you'll be able to see the size, and be sure it's not freezer burned.

A Happy Marriage is a Daily Decision

Pink TulipsWe've all been seeing chocolate, flowers, hearts and red and pink colors everywhere ever since the Christmas decorations were taken down at the beginning of this new year. We all know that this holiday is mostly a money making scheme for card companies, restaurants, flower shops, etc. I have to admit, that in my seven years of marriage, my husband and I never made a big deal about Valentine's Day. Quite frankly, this is the first year that I'm actually NOT working on Valentine's Day, and of course, Sergi works every year as well. Most years, the extent of our celebrating includes a card, Sergi gets me flowers and maybe we exchange small gifts, although most years we don't.

There are usually two ways of looking at Valentine's Day, either pouring yourself wholeheartedly into this holiday, celebrating love and romance or protesting the marketing and advertising that is all around by completely ignoring it.

Sergi and I go all out on our birthdays, though. I guess that's our thing. Sergi really makes me feel like a queen and spoils me to the ultimate degree on my birthday and I try my best to make his birthday special too. On our anniversary, we both celebrate our marriage and quite often make it a small getaway weekend somewhere not too far from home. Are birthdays vitally important? Of course not! Your marriage does not have to include extravagant birthday celebrations or extraordinary Valentine's Day experiences to thrive, just like the price of your engagement ring doesn't equal the degree of happiness in your marriage.

Cooking With Alcohol

Although I don't like to drink any alcoholic beverages, I certainly cook with them quite a bit. Wine, rum, liqueurs, etc. add so much depth and flavor to different dishes, both in savory and baked goods too. I believe one of the secrets of incredible flavors is using wine in your food, or adding different liquors to baking, frostings, etc. They elevate food from ordinary to SHAZAM - AMAZING!

Breakfast Strudels

Not only are we cooking for the wedding this weekend, but our apartment is also ringing with the voices of family gathering from all around to join in the celebration. Lots of people means lots of food:). Yep, you'd better believe I prepared a lot of freezer meals! I knew I wouldn't have any time to  make breakfasts and dinners, so I loaded up my stash of meatballs, sauce, chicken broth, pelmeni, etc.

Breakfast is probably the meal that you want the least amount of prep work. These Breakfast Strudels are just the thing. Sure, there's some prep work involved beforehand, but once you freeze them, there's nothing left to do on busy mornings except bake them in the oven. And then.... the MAGIC happens. Fluffy, cheesy eggs with Canadian bacon, sundries tomatoes and parsley. The cheese sauce keeps the eggs moist and fresh and the sun dried tomatoes and parsley really give a huge flavor boost. All this is encased in a crisp and flaky pastry.

Roasting vegetables in the oven caramelizes them and brings out their natural sweetness. This combination of brussels sprouts, green beans, broccoli, carrots, celery, zucchini, onion and mushrooms marries especially well together. I add soy sauce and balsamic vinegar to add another dimension of flavor and get a balance of sweetness, saltiness and acidity.

Here we go, folks! The saga of Olga + Vegetables = Love continues.

Another relationship that is just as loving, is Olga + Easy Recipes. The oven plays a big part in making cooking easy and fuss free. I take a few moments to prep, slide the baking sheet into the oven and return to something more fun, like reading a book, talking with my husband or playing with my sweet baby boy.

I was craving a whole slew of veggies, which isn't very unusual for me. If I start with one vegetable, I usually end up cramming as many as I can:). This time, I was going for a green theme - broccoli, green beans, celery,  zucchini and brussel sprouts. For additional flavor and aroma, I added carrots, mushrooms, shallots and garlic. You can use almost any kind of vegetable combination you want. Sometimes, I add cauliflower, peppers, asparagus, etc. Mix and match to the preference of your taste buds. Roasting vegetables until they are golden brown brings our their natural sugars. The caramelized veggies are so crunchy, sweet and flavorful, and the inside is tender and soft.

I've never made brussel sprouts for my husband before, but I was sure he wouldn't like it, since he doesn't like broccoli. I thought I would end up picking out all the broccoli and brussel sprouts out of the dish before serving him. Well, I was working that night and he came home unusually late, so we didn't eat dinner together like we normally do. I told him where to find the veggies and the rice and went on my merry way to work. He texted me that night, asking me "what was that interesting vegetable?" Well, I had forgotten to warn him about the brussel sprouts. Before I had a chance to respond, he went on to say "I don't know what they were, but they were the highlight of the dish". You could have knocked me over with a feather! The vegetable I thought I would have to pick OUT of his plate, he ended up picking out more of from the serving dish to ADD to his plate. I think the caramelization, the soy sauce and balsamic vinegar really do a phenomenal job of a superb flavor combination. [Read more...]
